Champagnedistriktets jordmån som består av tjocka lager kalk är det som gör området speciellt lämpat att producera mousserande vin. Kalken behåller väta vilket gör att vinstockarna får arbeta sig långt ner i kalken med rötterna för att nå vatten. När rötterna får kämpa så mycket skapar detta tåligare vinrankor.
Klimatet spelar även det en stor roll. Svala vindar och mycket sol ger en lång mognadstid vilket resulterar i mer kraft och smakrikedom i druvorna. Detta i kombination med bra vinmakeri och perfekt lagring gör att det produceras fantastiska viner i Champagne.
Kalken, som är alkalisk, hjälper även till att ge druvorna hög syra. Det är alltså inte enbart det strama vädret som ger hög syra, utan även jordmånen/terroiren påverkar.

Champagne Lombard – Terroir
2008 kom Christophe Pitois till huset Lombard som vinmakare och biträdande direktör Christophe Pitois som är född i Champagne och kommer från en odlarfamilj. Christophes ambition är att framhålla de unika odlingsförhållandena i Champagne. Fokus är i vissa fall ända ner på odlingslottsnivå. Vilket visar sig i de ”lieu dit” specifika viner man numera producerar och som många gånger håller världsklass!
Champagne Lombard äger 10 hektar vingårdar. Genom Christophe Pitois kontakter och nätverk inom vinnäringen så gör man nu viner från 21 av 44 premier cru lägen samt från 11 av 17 grand cru lägen i Champagne. Det är oerhört inspirerade och utbildande att prova “ren terroir” från Champagne på detta sätt.
