Det firar vi idag med ett teaser-recept från kokboken på Matpanelens favoritmuffins. Chokladmuffins
4 dl vetemjöl
3 dl havremjölk
2 dl socker
1/2 dl kakao
1 dl kikärtsspad
1 dl rapsolja
2 msk växtbaserad yoghurt
1 msk vaniljsocker
2 tsk bakpulver
1 tsk bikarbonat
2 krm salt
Kolasås
4 dl växtbaserad grädde
4 dl socker
4 dl sirap, ljus
4 tsk vaniljsocker
Frosting
200 gram växtbaserat smör, rumstempurerat
6 dl florsocker
2 dl kolasås
Flingsalt
Gör såhär:
1. Kolasås: Koka upp alla ingredienser i en tjockbottnad, bred kastrull. Sänk värmen och låt det puttra tills dess att kolasåsen inte längre är transparant till färgen.
2. Muffins: Sätt ugnen på 200 grader.
3. Vispa kikärtsspad och socker till ett vitt fluff (Tänk mellan marängsmet och porröst). Använd gärna en bunke i metall och se till att den verkligen är ren.
4. Blanda alla torringredienser för sig direkt i en rymlig bunke. Häll sedan över havremjölk och rapsolja. Rör om.
5. Med hjälp av en slickepott har du över kikärtsspadsblandningen i smeten. Vänd sedan försiktigt ner fluffet tills det att du fått en jämn smet.
6. Fyll muffinsformar och grädda i cirka 15 minuter. Stick dina muffins med en teststicka. Blir det inget kladd är dem klara.
7. När muffinsen fått svalna en aning skär du av locket och trycker ett hål med ditt finger. Fyll hålet med kolasås och lägg på locket åter igen. Upprepa tills att alla muffins är fyllda. Se till att ha minst två dl kolasås kvar till frostingen.
8. Frosting: Med hjälp av en elvisp vispar du samman alla ingredienser till frostingen i cirka 5 minuter tills dess att den blivit fluffig.
