    • 6 steggplants, peeled and thinly sliced
    • 1 kgground /minced lamb
    • 2 stred bell peppers, coarsely chopped
    • 2 stsweet green peppers, coarsely chopped
    • 2 stsmall onions, coarsely chopped
    • 10 klyfta(cloves of) garlic, finely chopped
    • ½ knippe(bunch) parsley, finely chopped
    • 2 msk(tablespoons) sweet red pepper paste
    • 2 tsk(teaspoons) salt
    • 1 tsk(teaspoon) black pepper

To make tray baked kabab, the clever-chopped kebab mixture is spread in a tray and sent to a
bakery/ pide shop to be cooked in a hot oven. In cities like Antakya, butchers prepare the kebab
mixture in a tray to order and send it to the nearest bakery to be cooked. Oven baked kebab is
very popular and frequently ordered by the bazaar’s shopkeepers.

Preparation:
1. Arrange the eggplant slices on a shallow tray.
2. Knead the ground lamb with the chopped vegetables, sweet red pepper paste, salt and black
pepper.
3. Spread the ground lamb mixture over the eggplants in the tray. If desired, further garnish with
tomatoes, green peppers and onions.
4. In a preheated 200 °C oven, bake for 25-30 minutes until all the vegetables are cooked.
